Fat Tuesday, Wednesday, Thursday…

I don’t discriminate, I am fat every day…but I this is only temporary.  : )

Looking back  I can’t even believe that person below is me.  It is important to me to go back, look and remind myself of how far I have come even when I plateau a bit.

The strangest thing is, I never felt that big…does this make sense?  Until I saw this picture, I didn’t realize how overweight that I really was.

Today I am still overweight but I find that I am well on my way to a healthier me.  I rarely struggle with making healthy choices and my cheat days are few and far between.  When I do cheat, I have a few local wine makers to blame or the makers of Three Olives Bubble Gum Flavored Vodka…I never said I didn’t have a vice. I drink green smoothies or juice my breakfast, juice my lunch, have a light snack (usually some dip that I have concocted out of greek yogurt or a cheese stick) and a healthy dinner.

Fat Tuesday?  Well, maybe, but I am one day closer to my goal and I am much healthier than I was in 2004.

 If you took note of yesterday’s wonderful chocolate pudding made out of avocados, look out, here comes another wonderful recipe!

Key Lime Mousse
  • 2 Large Avocados peeled  and pitted
  • 2 ripe organic bananas peeled
  • 2/3 cup fresh lemon juice (about 2 lemons)
  • 2/3 cup fresh lime juice (about 4 limes)
  • 2 tsp lemon rind (about 2 lemons)
  • 2 tsp lime rind (about 4 limes)
  • 1/4 cup agave, or more to taste
  • pinch of sea salt

    Key Lime Mousse

Place all ingredients in your blender and puree until creamy.  Simple as that!

If you are struggling with weight loss I have to tell you that the best investment that I have made for myself and for my family is my juicer.  I am juicing almost everything that can be juiced…my skin has never looked so good and I have never felt so great!  It also assisted in making the Key Lime Mousse a breeze for getting fresh lime and lemon juice.  ; )

It has been a busy day today so I am going to head to bed.  Zack did something incredibly unexpected last night, he ran into his kennel in our room and went to sleep.  Tre looked at him from the top of our bed like, “Are you outta your mind???”  It looks like I am back on track for getting the dogs our of my bed!  : )  I hope I didn’t write about that too soon…

  1. I loved the blog. You’ve convinced me to get a juicer; I had one before. It ws so messy and me being lazy…not a good combo. You look amazing now and yes I undersand about you not feeling as big as you looked. I go through that everyday. Inside I am 140 pounds light as a feather. LOL

    • Hi curvyelviesays! I found that my Jack Lalanne Power Juicer for $99 isn’t too bad of a clean-up. I can’t stand kitchen clean-up myself so I wanted something fairly easy…it takes about 5 minutes to take all a part and wash it, less time if you are only rinsing it. I decided to go with something fairly inexpensive to start with to see if I would stick with juicing. What really made me drop my weight is my discovery that I am gluten intolerant…cut out gluten and it is amazing how quickly the weight drops from your body, or at least mine did! The juicing is really helping me to toward a heathier lifestyle and I can’t seem to get enough of it. I usually don’t peddle kitchen appliances but I have to say this one is changing my life. Thank you for your kind words, I am a work in progress. : )

    • Good morning abbi! Yes, the rind is the same as the zest (I guess rind become zest after you use your cheese grater on it!)…not a dumb question…y0u should see me trying to follow some of these recipes! : ) Enjoy!

    I used to write a health column and it’s so awesome to see people, like yourself, losing weight by eating real food instead of going on crazy diets and taking pills for a “quick fix.”

    And I applaud you for using avocados too. I’m so tired of hearing people shun avocados because of the “fat.” When will people realize, it’s not “fat” or “calories” that are the enemies, it’s chemicals and artificial garbage.

    I made a similar dessert a few years back using avocados to make a lemon pudding. I will try your lime version, it looks so yummy!

    • Thank you so much for your kind words. I have tried it all seakist…the pills, the diets etc..what I am finding is that it is really simple: Cut out processed foods, cut out the breads and pastas (I found out a few years ago that I am gluten intolerant so when I cut out gluten, the weight began to come off) drink lots of water and eat plenty of natuaral foods. I love juicing and I am learning all sorts of creative ways to make things taste fabulous! Avocados are my new best friend. : )

  3. nom nom nom! Wish I could be as optimistic as you as you are. Finally lost 40 pounds after back surgery a year ago -down to a size 14, lost 40 pounds. After getting better, but being in pain and unable to exercise as I used to -even when a size 18- Am back to fat. Kicked bulemia after 25 years, but just stopped the purging, Still binge.

    Am going to watch how you do it and keep track.
    I hate myself right now, You are giving me hope. Thank you.
